Homemade Pizza and Grilled Chicken Spring rolls

I think we call all agree that most people have a LOVE for pizza. Homemade, frozen, pizzeria and in some cases for children's school pizza. Being the Philly girl that I am I have had the pleasure of tasting top notch pizza from Philly and NY. Most of the population in the U.S will agree that NY has the best pizza. I too agree and confirm that nothing beats a large NY slice of Pizza until of course someone  ares to prove me wrong. 

Making pizza to me is like my own secret way of baking a cake. I have no expertise in pastries but when it comes to pizza it's feels like I am the top chef! Making dough is one particular skill in pizza making that you have to master. However if you like to cheat just a little like I do from time to time you can get away with some pre-made pizza bread such as Nann bread. 

There's so many times of pizzas out there you could literally eat a different type of pizza every day for 360 days. Imagine not having to get bored with your taste buds and eating just cheese pizza. Imagine all the different types of toppings and sauces you can add to your pizza to make it your very own. You will see a lot of blogs from me in the future about pizza so stay tuned! 

I find it most pleasing and time effective to buy packaged pizza ready bread rather than making dough. I know, I know you real professional pizza makers are probably going to have something to say about that but that's okay I get it. From one chef to another it is always best to make your own dough but sometimes you just want to take the quicker route.

I love making sauces recently it has become my new specialty.  My oh my I think I've gotten so good at it you won't believe it! I LOVE putting tomatoes in my blender adding all types of fresh herbs, garlics, onions and peppers. You can come a pretty darn good sauce professional literally over night if you have the right ingredients.

Out of my three daughters my middle daughter doesn't like pizza at all! Can you believe that? Neither can I. However I figured somethings children will love if they can make it on their own to there liking or at least ask what they would possibly like on the pizza as I did to my 18 year old daughter. I ask her what she would like on her pizza and she said no sauce. I quickly knew that I was at a good start with her because she didn't totally refuse pizza all together. 

I quickly began adding mozzarella cheese then spinach, more moz, then grilled chicken topped with more moz. I preheated the oven to 400 degrees then placed the pizza in the oven for about 8-10 minutes. After making the plate nice and pretty for her she looked and said how yummy it looked. I was so excited for her to taste it because as a chef mom you really want your children to love what you cook. It's not always easy making separate meals to accommodate likes and dislikes. This is also the same child who doesn't like shrimp either...can you believe that? 

The above pizza has pizza sauce and look how vibrant a meal looks with all fresh ingredients.

This pizza has no sauce and don't worry the cheese will melt and blend perfectly with no sauce.

I experimented with making sweet potato chips. It is not as easy as it sounds and I'm sure anyone who has mastered it can tell you that they've tried over and over to get it right. I made a few batches but wasn't as successful to get them crispy crisp. I wish I had a deli meat slicer to cut them as thin as they really needed to be and that was part of my struggle. If there's anyone out there that would love to donate to me a small deli slicer I would take it in a heart beat! 

I cooked my chips in a deep fryer that only goes up to about 375 degrees. Between not having a deli slicer and temperatures hot enough I wasn't able to pull it off. However I did come up with a pretty decent texture but couldn't really call them crispy chips. Nonetheless they were still good and enjoyed by the children.

Making your dinner plate look amazing is the norm around our house. If a plate looks good with love it will be digested with love and your body will thank you. It is truly important to have each meal with love and veggies! No veggies on a place equals no love at all in my book. I used organic baby spinach to top our pizzas and look how vibrant and delicious it came out.

Over the years I've learned how to make these gorgeous wraps. I haven't master the technique of making the dough from scratch but I think the geniuses who packaged them and placed them in the isle of Kroger. I haven't had one person yet who's tasted these and didn't love them. These are the talk of the night no matter what other dishes are present these babies are like gold. 

I used grilled chicken and cabbage to stuff these golden babies.  Egg roll wraps cook in the deep fryer very quickly this is not something you want to walk away from while cooking. They cook in about 2 mins and sometimes faster deepening on the heat. Cooking these on med high temperature is the key. Once lightly golden take out and enjoy! 

Plate and serve! Sweet and sour sauce for your grilled chicken rolls or add any dipping sauces of your choice. While browsing through the kitchen looking for our sweet and sour sauce I realized we had run out and used it all when I catered a House Warming. Instead I improvised and used a spicy chipotle mayo. Not favored by the children but I tried.
